Southern Butter Baked Chicken.

Growing up, my mother cooked dinner nearly every night and she is an excellent cook for sure! Staples from our very southern upbringing was lots of mashed potatoes, corn (grilled and not grilled), broccoli, green beans, Mac and cheese and lots of other things like fried chicken, fried pork chops (and tenderloins). In the true south I have to say that life is a lot slower than life in other part of the country. Life for me was excellent there really was never a dull day, my sister and I lived outside in the summer we played for hours in fields, barns, dirt and rain. Then in the evening my mom would yell outside and we would file inside to get washed up for dinner.

•6-8 chicken breasts
•1 (12 ounce) cans evaporated milk
•1 cup flour
•1 1/2 teaspoons salt
•1/8 teaspoon pepper
•1/4 cup butter or 1/4 cup margarine
•1 (10 3/4 ounce) can cream of chicken soup
•1/4 cup water

1 Preheat oven to 425.

2 Dip chicken in milk, then roll in seasoned flour.

3 Melt butter in 9 x 13 baking dish.

4 Place chicken, skin side down, in butter.

5Cook 30 minutes.

6 Mix water, remaining milk and soup together.

7 Turn chicken and pour soup mixture over it.

8 Bake 30 minutes more.

9 Remove chicken and stir gravy.This recipe is absolutely delicious, very southern and very fattening! It's extremely good with mashed potatoes and green beans!
